Abbi Lawson is a forager, baker and self-proclaimed food experimentalist who recently appeared as a contestant on the Great British Bake Off. She’s also a regular volunteer here at Greenbelt, and she’s been busy this year heading up the bunting team! Fuelled by the dual passions of food sustainability and finding the divine in nature, Abbi can usually be found deep in a patch of brambles, climbing a tree to reach a flush of mushrooms, or spending three days designing and creating a woodland grove-themed birthday cake (for herself). When she’s not busy foraging, Abbi works for a veg grower’s co-operative, and loves to experiment with novel ways to flavour cakes and desserts with seasonal and locally grown vegetables. Her stint on the Bake Off solidified her love for finding meaning in food and baking, and exploring the ways in which the food we eat connects us to the place and planet that we call home.
